This season, La Table du Ruitor, located on the Méribel-Mottaret snow front, continues to innovate to combine culinary pleasure and respect for the environment on its menus.

This winter, we are celebrating the treasures of Savoie’s terroir by working with local and organic products, carefully selected from the finest Savoie cheese producers and regional suppliers. All our recipes are entirely homemade, from traditional dishes to sides like our famous French fries, ensuring optimal freshness while reducing plastic packaging.

For vegetarian enthusiasts, a diverse selection of environmentally friendly dishes enhances our menu, including gluten-free and plant-based options available as starters, mains and desserts. Every Monday evening we also offer a plant-based dinner, a new way of discovering the flavours of the Earth’s produce.

These initiatives, which are close to our hearts, aim to offer our guests a memorable culinary experience while minimizing its impact on the planet.

This winter, Hôtel AlpenRuitor**** Spa & Restaurants, located in the heart of Méribel-Mottaret, offers a more sustainable coffee break by partnering with Illycafè, an iconic Italian brand and a pioneer in sustainability and eco-responsibility.

Illycafè has earned the prestigious B-Corp certification, a globally recognized label that ensures responsible business practices. The brand is part of a worldwide movement that supports ecological and social transition, promoting sustainable practices.

You can enjoy Illycafè from breakfast to any time of the day at our bar for a delicious break. By offering this premium, ethically crafted coffee, we provide you with a high-end taste experience while contributing, in our own way, to preserving our beautiful planet and its biodiversity.

In the rooms of Hôtel AlpenRuitor, the elimination of single-use plastics represents a meaningful step toward more sustainable hospitality.

We are also proud to collaborate with the French brand Omnisens for in-room amenities as well as at the Spa du Ruitor. Specialist in body care, Omnisens is a member of the 1% For the Planet collective and offers sensory, natural, cruelty-free products made in France.

We also encourage you, whenever possible, to prioritize eco-friendly modes of transport during your stay at Hotel AlpenRuitor, whether traveling to Méribel or getting around the resort, especially thanks to the Méribus shuttle service and the gondolas.

Our actions in our Maisons around the world

In its properties in Argentina, Italy, and Brazil, Maison Fenestraz adopts new ecological practices.

In Argentina, at our Relais & Châteaux estancias House of Jasmines in Salta and El Colibrí in Córdoba, we have created true organic gardens, allowing us to grow vegetables, fruits, and herbs used in our restaurants, offering a complete “garden-to-plate” experience.

Relais & Châteaux has also announced a new exclusive partnership with UNESCO, aiming to fight for a more humane world and the responsible preservation of sustainable culinary and hospitality traditions.

At Estancia El Colibrí, celebrating its 20th anniversary in 2025, we have taken our commitment even further with an ecological farm featuring chickens, ducks, goats, sheep, cows, horses, and llamas. These animals are raised outdoors and fed grass, with respect for all living beings and the land being part of our core values.

Our farm, Don André, is also EOV certified for regenerative farming. This means that our soil and resource management allows them to regenerate and increase biodiversity.

In Italy as well, our private villa Masseria del Gigante promotes local and organic products. We produce bio and healthy products both for the environment and health, such as jams and high-quality olive oil, produced from the century-old olive trees surrounding our home.
